Brinjal (vankaya) kottimera karam

prepare time   20 minutes
serve with  4 to 5 persons




Ingredients
Quantity
Brinjal (van kaya)
10
Coriander leaves
1 bunch (1 katta)
Green chilly
8
Salt to taste

Oil
2 table spoon



Preparation method

1.      Wash the brinjal cut into the long strips and put it into the water keep it aside
2.     After the green chilies, coriander leaves and grind it into smooth paste keep it aside.
3.     Then heat the pan, add oil to it. When the oil is heated add chopped brinjal and cover with lid 5 minutes.
4.     When the brinjal cooked add salt and stir it well and cover with lid for 5 more minutes
5.     Then remove the lid add coriander paste stir it well after 2 to 3 more minutes.then switch off the stove.
6.     Then serve with hot plain rice or roti’s
