Vankaya Masala Curry




Ingredients

Vankayalu

Ginger garlic paste

Dania, jeera powder
1 table spoon
Garam masala
1 table spoon
Red chilly powder
1 table spoon
Salt to taste

Oil
3table spoons
Green chilly

Coriander leaves
few

Preparation method
1.Wash the brinjal (vankayalu), onions, tomato and cut into small pieces keep it aside.
2.Heat the pan and add oil, after that add onions and fry them, add green chills, ginger garlic paste, and add turmeric, salt, fry it well then add tomatoes, stir it well and cover the lid for 5 minutes.
3.Remove the lid add brinjal(vankayalu) pieces, dania powder, garam masala powder red chill powder, and again mix it well, then cover the lid for 5 more minutes. Remove the lid and switch off the flame.
4.Garnish with coriander leaves. Then serve with hot plain rice,or chapatti.
