Kudumulu






Ingredients
Quantity
Rice
2 cups
Grated coconut
1 cup
Jaggery
11/4 cup
Salt
Pinch
Oil
1 table spoon

Preparation method

  1. Add rice in Mixy and grind it into coarse rava.
  2. Take the pressure pan and add 5 cups of water and pinch of salt and  mix it well. When water is boiled then add oil and add rice rava, mix it and cover the lid for 20 minutes. When the rava is cooked then switch off the flame.
  3. Heat the pan add grated coconut and add jaggery, mix it and stir continuously. Allow the jaggery to melt and cook on a low flame till the coconut mix is thick. When it thickens add one tea spoon of ghee, mix it well and turn off the flame. Allow it to cool and prepare round shape balls and keep aside.Then coconut ladoo is ready.
  4. Now mix cooked rice rava well.Then take the rice ravva and stuff coconut ladoo in it and make a round shape ladoo.Then follow the same process for remaining part.Then steam it in idly stand for 20 minutes then switch off the flame..
  5. This Kudumulu is one of the main dish for Vinayakachavithi Festival.

Vundrallu








Ingredients

Soaked Chana dal

Preparation method

  1. Add rice in a Jar and grind it into coarse rava
  2. Heat the pressure pan, add 5 cups water and add salt,cumin seeds, mix it well.. When water is boiling ,add 1 table spoon of oil, Chana dal and rava.Mix it and cover the lid for 15 to 20 minutes. When the rava is cooked then switch off the flame.
  3. Let it cool down then prepare round shape Vundrallu.
  4. This vundrallu are prepared in vinayakachavithi festival. 

Zucchini paratha






Ingredients
Quantity
Grated zucchini with skin
1 cup
Wheat flour
2 cups
Coriander cumin powder
1 tea spoon
Red chili powder
1 tea spoon
Chat masala
1 tea spoon
Salt
1 tea spoon
Oil
2 table spoon
Coriander leaves

preparation method 

  1. Take a wide bowl.Add wheat flour and add all ingredients.Mix it well then add zucchini mix and add little bit of water and make a chapatti dough.Cover it for 30 minutes.Prepare round shape medium sized balls.
  2. Take it rolling pin and make chapathi.
  3. Then heat the chapatti pan, put the rolled chapatti on the chapatti pan and add 1 table spoon of ghee and flip it. When one side starts changing color flip it again and burn it evenly on both sides.
  4. Then zucchini paratha is ready to serve.
  5. You can serve it hot with any curd chutney or any curry..

Spring onions sprouts curry

Preparation method
1.Heat the pan ,add oil then add mustard and cumin seeds .Fry until brown. 
2.Then add ginger garlic paste, fry for 1 minute then add turmeric, spring onions, onions, salt .Fry it for 3 minutes 
3.Then add tomatoes fry it for 3 minutes then add cooked potato, mix it and add cumin coriander powder, red chili powder, garam masala powder, mix it and cook it for 5 minutes then add sprouts mix it and cook it for 5 more minutes then switch off the flame garnish with coriander leaves.
4.You can serve it with chapatti or puri and rice.

Zucchini rice








Ingredients

Basmati rice
1 cup
Grated zucchini
1 cup
Mustard seeds
1 table spoon
Cumin seeds
1 table spoon
Butter &oil
2 table spoons
Bay leaves

Preparation method

  1. Wash the basmati rice and soak it for 30 minutes.
  2. Heat the pan add oil and butter to fry then add mustard seeds, cumin seeds, bay leaves cinnamon stick red chili fry it for 1 minute then add grated zucchini fry it for 2 minutes then add soaked rice and water mix it and add salt turmeric lemon juice mix it and cook it for 15 to 20 minutes then switch off the flame.
  3. This rice is very tasty and healthy.
  4. You can serve it with hot.

Tomato nuvvula podi chutney (tomato sesame seeds chutney)

Preparation method

  1. Heat the pan add oil to fry then add sesame seeds fry it for 2 minutes then switch off the flame and grind it to smooth powder.
  2. In the same pan add oil to fry then fry black gram  then add mustard seeds, red chili, hinge fry it for 1 minute then transfer to a plate. Add chopped tomatoes ,salt, turmeric fry it for 5 minutes then switch off the flame
  3. Put the mixer grinder and add tomatoes, red chilies, tamarind grind it to coarse paste then add sesame seeds powder, coriander leaves, and seasonings and grind it one more time then transfer to serving bowl
  4. You can serve it hot plain rice or idly dosa very tasty.

Mixed dal sambar

Preparation method

  1. Wash the dals and add water and cook it for 3 whistles. Let it cool down the pressure and mash it ke ep aside.
  2. Take a wide bowl add oil to fry then add mustard seeds cumin seeds, red chili powder hinge and add fenugreek seeds fry it for 1 minute then add curry leaves, green chilies, and add mixed vegetables and add tamarind juice , and little bit of water, turmeric salt mix it and cook it for 20 minutes then add cooked dal  sambar powder, grated coconut, and add jaggery mix it and cook it for 5 more minutes. Then garnish with coriander leaves.
  3. You can serve it with hot plain rice with papads or idly sambar very tasty and healthy.

Sprouts chat

Preparation method

  1. Soak the sprouts in water for one day. And remove the water, and cook it the pressure pan and add a pinch of salt, turmeric, add water and cook it for 2to 3 whistles, then remove the water.
  2. Then take a wide bowl and add onions, tomatoes, green chili and cooked sprouts salt.Mix it well then add chat masala, cumin coriander powder, red chili powder,,garam masala powder.Mix it well then finally add the coriander leaves, lemon juice mix it well.
  3. This is very healthy snack very tasty. 

Dosakaya tomato chutney

  1.        Heat the pan add oil to fry then add grated cucumber.Fry it for 5 minutes then add tomato paste and fry it for 4 minutes then add salt, dry roast  mustard powder, red chili powder and add hinge.Mix it well. And fry it for 2 more minutes then switch off the flame.
  2.     You can serve it with hot plain rice or dosa very tasty and healthy.

Chema Dumpa(Colacasia)

Chema dumpa

Red chili powder

Preparation method

  1. Wash the Chema Dumpa and cut it into half then add water and cook it for 1 whistle.
  2. Let it cool down the pressure then remove the skin and keep it aside. Then put it in the microwave for 3 minutes.(To remove the stikkiness)
  3. Heat the pan and add oil to fry then add chema dumpa, fry it until red color. Then add salt,red chili powder and mix it well.
  4. You can serve it with hot plain rice or side dish for sambar which tastes yummy.

Aloo sprouts curry

Preparation method

  1. Whole moong dal(Pesalu) soak it for overnight.
  2. Heat the pan add oil to fry then add ginger garlic paste fry it for 1 minute then add onion fry it for 2 minutes
  3. Then add tomatoes salt, turmeric, coriander cumin powder, mix it well and cook it for 2 minutes then add boiled potato  and add garam masala mix it well.  Then finally add sprouts.Mix it and cover the lid for 5 more minutes then garnish with coriander leaves
  4. You can serve it with hot plain rice or chapatti and naan tastes Yummy!!
