Pumpkin rasamalai








Ingredients
Quantity
Grated pumpkin
1 cup
Milk
6 cups
Cardamom powder
1 tea spoon
Chopped almonds
1 table spoon
Chopped pistachios
1 table spoon
Sugar
½ cup
Sooji rava
4 table spoons
Grated coconut
½ cup
Maida
2 table spoon
Saffron
pinch

Preparation method

  1. Peel and grated the pumpkin and cook them soft with enough water. Drain the excess water and mash them well. Boil milk in a heavy bottom pan and reduce it to half. Add sugar and cardamom powder, and add saffron milk and take it off the flame.
  2. In another bowl mix the mashed pumpkin and add grated coconut, sooji, Maida mix it well. Make small ball of the mixture and boil them in water for 5 minutes. Then add mix it in the milk. And cook it for 3 more minutes, and then switch off the flame. Garnish with chopped almonds and pistachios.
  3. You can chill it and serve.
