Brinjal (vankaya) Curry






Ingredients
Quantity
Brinjal (vankayalu)
250 gms
Chana dal
1 table spoon
Dania seeds
1 table spoon
Black gram
1 table spoon
Fenugreek seeds
6to 7
Red chilly
10
Cumin seeds
1 tea spoon
Salt
To taste
Oil
3 table spoons

preparation method 

  1. Wash the Brinjal cut into long slices keep it aside.
  2. Heat the pan add oil, when the oil is heated add all ingredients fry it for 3 minutes.
  3. Let it cool down.  And grind it a fine powder, and keep it aside.
  4. Heat the pan add oil, when the oil is heated add brinjal pieces, and cover the lid, fry it for 5 minutes, and remove the lid, then add salt, and stir it well, once cooked then add curry powder mix it well. And fry it for 3 more minutes. Then switch off the flame.
  5. You can serve with hot plain rice, or chapatti
