Preparation method
- Wash the egg plants cut into half way and slices into 4 groups.
- Heat the pan, add oil to fry, and then add egg plants fry it for 5 minutes and transfer to plate.
- The same pan add oil to fry then add onion paste fry it for 2 minutes then add salt, turmeric, grated mango cook it for 3 minutes then add Dania powder, red chili powder, garam masala powder, peanut powder, mix it well and cook it for 5 more minutes. Then add fried eggplants mix it, and cook it on medium flame for 5 minutes then switch off the flame. Garnish with coriander leaves.
- This curry is very tasty. You can serve it with plain rice or chapatti or biryani.
- Tip :Never Grind tomato and onions together.
