Mavidikaya Gutti vankaya Curry(Eggplant,Mango)












Ingredients
Quantity
Small eggplants
250 gms
Dry roast pea nut powder
1 table spoon
Dry roast sesame seeds powder
1 table spoon
Grated mango
1 table spoon
Onion tomato paste
2 table spoons
Dania jeera powder
1 table spoon
Red chili powder
1 tea spoon
Garam masala powder
1 tea spoon
Salt
To taste
Oil
3 table spoons
Coriander leaves
few

Preparation method

  1. Wash the egg plants cut into half way and slices into 4 groups.
  2. Heat the pan, add oil to fry, and then add egg plants fry it for 5 minutes and transfer to plate.
  3. The same pan add oil to fry then add onion paste fry it for 2 minutes then add salt, turmeric, grated mango cook it for 3 minutes then add Dania powder, red chili powder, garam masala powder, peanut powder, mix it well and cook it for 5 more minutes. Then add fried eggplants mix it, and cook it on medium flame for 5 minutes then switch off the flame. Garnish with coriander leaves.
  4. This curry is very tasty. You can serve it with plain rice or chapatti or biryani.  
  5. Tip :Never Grind tomato and onions together.
